Summer tomatoes and avocados! Is there anything better? Well… maybe the white peaches that are sitting on my counter waiting for breakfast, but I digress. There’s something utterly delicious in the simplicity of summer cooking that I love. It must be all the fresh produce at the farmers markets that has me giddy. Especially heirloom tomatoes. I LOVE them. Pair them with avocados and a little french bread and I’m set.
- Heirloom Tomatoes
- French Bread
- Salt & Pepper
- Olive Oil
Slice French Bread on a diagonal and butter each side. Place in a non-sick pan and toast until golden brown on both sides. Slice avocados and tomatoes toss with olive oil, salt, and pepper. Spoon mixture on top of the French bread and dig in.
