Can anyone tell me what’s better than basil, mozzarella, tomatoes, balsamic vinegar, salt, and pepper on a summer evening after a long day of work? Okay, maybe a nice blended margarita would be freaking awesome. Anyway, I’m a huge fan of fast, fresh, healthy dinner options, especially ones which you can eat while making what you’re actually planning on having for dinner. Keeping my fingers out of dinner fixin’s is hard. Okay, it’s a problem. I’m seeking help.
