Feta is one of those cheeses that people seem to either love or hate. I’ve yet to meet anyone who could just take it or leave it. That’s how I feel about sushi. I just don’t get what all the fuss it about. Mind you, I’ve heard people either love it or hate it. So there’s probably someone in this world who just doesn’t really care about Feta, and if you’re that person, this recipe might not be for you. But if you love Feta like I do and always have some stashed in the fridge right alongside your Parmesan and Asiago then I suggest you turn on your oven and grab the Feta. This is so simple and quick you’ll want to have it as a snack, or possibly the entirety of your lunch, several times a week. I wouldn’t mind having it for breakfast or dinner either.
1 6 oz piece of Feta
Heat oven to 350. Place feta in the center of a piece of foil. Top with several sprigs of fresh thyme, drizzle with olive oil, and season with pepper. Seal the foil to form a packet. Place packet in oven until Feta is soft in the center, approximately 10-12 minutes. Transfer to shallow bowl or plate and serve with French bread, preferably warm French Bread.
