Grapefruit Jelly

I had never had grapefruit jelly until now. I had also never made jelly. Let me say, what a surprise! Really easy and really good. The hardest part was finding the pectin and that was only because I’ve never purchased it before. Now I know and I’m thinking there will be more of those little boxes making their way into the shopping cart in the future. Especially now that berry season has started.

2 c sugar

1 1/2 c fresh grapefruit juice

1/4 c liquid pectin

Combine sugar, grapefruit juice, and pectin in a large sauce pan. Cooking over medium heat. Once sugar has dissolved increase the heat to high and whisk until mixture boils vigorously about six minutes. Pour into a large baking dish and set aside to cool to room temperature. Transfer to your storage container(s).
