Fluffy Mini Corn Dogs

In the small town I grew up they have a county fair every August and whenever we go one of the fist things we do is get in line for a corn dog. It’s not just any corn dog either. It’s an honest to goodness real corn dog. Not one of those previously battered and frozen things that other people serve. These are the real deal.

As it’s summer and I heaven forbid I don’t get in my yearly corn dog fix I decided I should take things into my own hands. These little buggers are addicting. You won’t be able to have just one. I promise.



1 c. cornmeal

3/4 c. flour

1 1/2 tsp salt

3/4 tsp baking powder

1/2 tsp baking soda

1/2 tsp cayenne pepper

2 tbsp + 1 tsp sugar

1 1/4 c buttermilk

4 c vegetable oil

Mini Sausages



Mix the first nine ingredients together and let them rest for 10 minutes. It’s hard work being stirred together. While their resting, heat the oil to 375 degrees in a high sided skillet. Insert a toothpick into the end of each little sausage. Make sure you leave about and inch exposed. Next, dip each sausage into the batter and carefully place in the oil. Fry no more than three at a time and make sure you remove your cat from the cupboard under the sink. Turn them with a slotted spoon so that they turn nice and golden on all sides. Transfer to a paper towel lined plate. Serve with mustard or any other condiment that thrills you.
