Spinach Salad with Bacon and Mushrooms

For all of you who think salads are boring, this might change your life. It definitely made my week more delicious and I might just have to have it again tomorrow and the day after that until there’s nothing left in house to make another. Rich, yet fresh!!! Need I say more?



2 slices of thick cut bacon, chopped

2 c mushrooms, sliced

1/4 cup red onion, diced

1/4 c smoked Gouda, diced

2 tbsp walnuts, chopped

1 tbsp olive oil

1/2 lime, juiced

1/2 tsp oregano





In a large skillet cook bacon and then remove bacon and add sliced mushrooms. While these are cooking, wash spinach, dice up the onion, Gouda, and walnuts. Also, mix olive oil, lime juice, oregano, salt, and pepper in a small container. Top spinach with mushrooms, onion, cheese, walnuts, and drizzle with vinaigrette.
