Autumnal Banana Bread

The girls and I got an early start on Saturday morning which meant we were able to wander the street of our neighborhood before most people were awake. We love the quiet morning streets as the sun comes up over the city. Early mornings also allow us to get things done and this Saturday was pretty productive.

We drove down to Palos Verdes to get their rabies vaccinations later in the morning. The vet even commented on how well behaved they were. So, now I really can say they are the and not sound completely crazy. I have backup! Hehehe! In the afternoon, we cleaned the house, finished the dinning room table I’ve been working on and also started the staining process of the bedside tables I’m making. I also managed to make an apple pie and a loaf of banana bread. By the time 9:00 hit, I was ready for bed. I can’t even remember what time we did make it to bad. I know, talk about a thrilling way to spend a Saturday night, but we had plans for Sunday morning and they involved hiking and a trip to Surfas.

Ingredients

2 c flour

1 c sugar

3/4 tsp baking powder

1/2 tsp salt

3 bananas

2 eggs

1/4 c butter

1/2 c apple sauce

1 tsp vanilla extract

Preparation

Preheat over to 350. Mix dry ingredients together and then blend in bananas, eggs, butter, apple sauce, and vanilla extract. Next, grease loaf pan and pour batter in. Pop it into the over for about an hour or until toothpick, when inserted in the center, comes out clean.
