Apple Butter – Slow Cooker Style

What do you do with approximately 50 pounds of apples? You get creative. So far, I’ve tried and made, mini apple pies, a deep-dish caramel apple pie, and now, apple butter. Still on the agenda, apple sauce, some sort of apple grilled cheese goodness, maybe an attempt at apple ravioli, and who knows what else. I’m determined to make the most out of the haul. Suggestions are welcome!

Ingredients

12 apples – peeled, cored, and sliced

1 tbsp pure vanilla extract

1 c sugar

1 c brown sugar, packed

1 tbsp ground cinnamon

1/2 tsp nutmeg

1/4 tsp ground cloves

1/4 tsp salt

1 tbsp pure vanilla extract

Preparation

Step 1. Find your crock pot. This is essential as autumn will be here before you know it and this lovely little appliance will be in heavy use.

Step 2. Inspect said crock pot for fluff. In my house, there’s never a shortage of fluff even though I vacuum twice a week and de-fluff the fluffy kids regularly.  Fluff is a fact of life.

Step 3. Peel, core, and slice apples and toss in crockpot. Add vanilla extract.

Step 4. In a bowl, combine remaining ingredients and stir together then pour over the apples in the crock pot. Stir and turn on low for about 8 hours.

Step 5. Let cool and then blend with one either an immersion blender, blender, or food processor, which ever is easiest to reach and is clean.
