Spicy Roasted Tomato Pasta

Do you ever have one of those days when you get home from work and you’re dying for something unbelievably delicious but you have no interest in spending more than a few minutes in the kitchen? I’ve been there several times in the last couple of weeks and this little concoction has totally saved me. It’s incredibly easy and while it’s cooking you can do other things like take the trash out, de-fuzz the dogs, catch up with family, and anything else you might need a handful of minutes for.


1 large can of whole peeled tomatoes

5-7 cloves of garlic, minced

2-3 anchovy fillets

1/4 c butter

3/4 tsp red pepper flakes

Spaghetti or any other pasta you might have stashed away in your cabinets

Parmesan, grated


Preheat the over to 450. Combine the first five ingredients in a 9 x 11 baking dish. Roast for about 30 minutes and then mash. I used a potato masher but a large fork would also work.

While the tomatoes are roasting, cook the pasta in a large pot. Drain and then toss in the spicy roasted tomato sauce over the pasta.

And with that I’m off to get in a quick three miles run before work.
