The Hatch Burger

Over the weekend I was able to spend several glorious hours in the kitchen. For some, that may seem like a life sentence without parole, but for me it’s like heaven. While I was messin’ around I whipped up the Umami Burger which was covered in Sunset magazine a few months ago. Oh, these are sooo good and soooo easy to make.

Roast, peal, seed, and chop 3 Anaheim and 3 Poblano chiles; season with 1/4 tsp salt. Mix 1/2 cup mayo with 1 tsp minced garlic. Season 1 1/2 lbs ground beef with more salt, divide into 4 patties, and grill over medium heat, turning once and sprinkling with a dash of soy sauce as you go, 8 minutes for medium. Melt sliced white American cheese onto burgers. Serve on buttered grilled Hawaiian rolls, slathered with garlic mayo and topped with chiles. Serves four.
