I feel like I’m a little late to the party, the Orange is the New Black party that is. Who else is binge watching? I just started. I’m still in Season One. Please no spoilers! Also, I haven’t read the book. I know, crazy right? I almost always read a book before I watch the movie. But, thankfully, this is not a movie so it doesn’t count right?
Anyway, I whipped up a little Avocado Egg Salad and topped some fresh summer tomatoes with it the other day. It was pretty amazing! This could turn into a regular thing around here…just like Orange is the New Black.
2 hard boiled eggs
1 tbsp chopped cilantro
1/2 tsp lemon juice
Salt & Pepper to taste
Grab everything, then grab a bowl, and a plate. You’ll also need a knife and a fork. Cut up the avocado, peal the hard boiled eggs, toss them in a bowl and get to mashing. Chop up the cilantro, add the lemon juice, and give it a stir. Next, slice up the tomato and spread it all out on the plate. Add a little salt and pepper. Top with a big ol’ scoop of the avocado, egg, and cilantro mixture. Add a little grated parm and boom you’re done. That took you all of five minutes and I’d consider this to be mighty healthy. Nom. Nom. Nom.
