Am I the only one who uses summer as kind of an excuse to not cook a lot? I barely bake. I find just about every reason imaginable not to turn the oven on. If I can’t make it in less than 20 minutes I’m usually not interested. It really has to be inspiring or I really have to be desperate. So in honor of hot summer nights everywhere, let’s make some Parmesan Crimini Mushrooms. I promise you won’t break a sweat. Unless of course it’s 110 degrees where you are. In which case you’re probably already sweating and I suggest skipping this recipe all together and going out to watch a movie. They have A/C in movie theaters and sour patch kids.

Parmesan Crimini Mushrooms – Cheers Susan

Ingredients

1 package of Crimini Mushrooms

1 tbsp Butter

2 tbsp Parmesan

Salt & Pepper to taste

Preparations

In a large non-stick pan, toss in a tablespoon of butter and let it melt. Cut the mushrooms in half and then in half again and toss them in the butter. Cook these over medium heat until nicely browned. Toss them in a bowl, add Parmesan, salt, and pepper. Give it a nice toss and serve. I had a little basil for the hell of it but rosemary would have been awesome too.
