This recipe could easily be called “half cup” since it’s filled with a half a cup of this and a half a cup of that. In the end convention won out. But, that doesn’t mean that these aren’t just the best little breakfast cookies I’ve made in a while. Yes, you read that right, breakfast cookie. I know. It almost sounds like I didn’t have my coffee this morning. Haha! But hear me out. These are not crazy intense cookies. They’re not overly sweet nor all up in your face with too much spice. These beauties are subtle and soft like early morning puffy clouds of numminess. Wait, is that a word? If it isn’t it should be!

Anyway, I made these with Bob’s Red Mill 1-to1 Gluten Free flour and I couldn’t tell the difference. But, feel free to use regular flour if that’s what you have on hand. Now, to get down to business.

Ingredients

  • 1 1/2 c gluten free flour
  • 1 1/2 c rolled oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 c warm water
  • 1 tbsp ground flaxseed
  • 1/2 c coconut oil, room temp
  • 1/2 c sugar
  • 1/2 c Fuyu persimmon
  • 1 tbsp molasses
  • 1/2 c raisins
  • 1/2 c walnuts

Preparation

Preheat your oven to 350.

In a large bowl mix together the first seven ingredients. In a separate small bowl combine the water and ground flaxseed and let that rest for 2-3 minutes. Next combine the coconut oil and sugar and then add in the persimmon, molasses and stir well to combine. Stir in the ground flaxseed to your wet ingredients and then start incorporating your dry ingredients. Finally, toss in the raisins and walnut and give it a final stirring so that they’re nice distributed.

With a spoon scoop small ping pong ball sized onto a greased cookie sheet. Pop the cookie sheet into the oven for about 15 minutes.
