I love tacos! I love them so much that I might be willing to declare 2016 the year of the taco! And what better way of starting off the New Year than with a batch of crock pot tacos. This is one of those recipes that’s so incredibly easy and makes a whole bunch. Weekly meal planning doesn’t get much easier!
1/2 tsp cayenne pepper
3 tsp cumin
1/2 tsp onion powder
1/4 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 lbs flank steak
2 bags (8 servings) of frozen bell peppers and onions
1 jalapeno, diced
Your favorite salsa
Mix together the spices and then rub the mixture all over the steak. Place the steak in the bottom of the crock pot and then dump in the bags of bell peppers and onions and diced jalapeño. Turn heat to high for 4 hours or low for 8 hours.
After the meet has cooked remove it from the cockpit and shred it with a couple of forks. You can either put the shredded beef back in the crock pot for a little while longer while you walk the dog or serve as is.
To serve, heat the tortillas in a skillet on the stove. Spoon in some of the carnitas in tortillas and top with slices of avocado, salsa, cilantro, and a squeeze if lime.
Grab a margarita and dig in!
