You know how, in the Wizard of Oz, when Dorothy is walking through the woods and she’s chanting “Lions and Tigers and Bears, Oh My!”? Well, this little salad proved that when you put avocados, bacon, and blue cheese together, the words “Oh, My!” might escape my lips. Who knew?
2-3 slices of bacon, I’m quite partial to the uncured thick cut maple smoked bacon from Trader Joe’s
1 avocado, chopped
1/4 c blue cheese, crumbled
1 tsp sweet onion, minced
1 tsp red wine vinegar
2 tbsp olive oil
In a large frying pan over medium heat, cook the bacon until crisp. Remove and chop into small pieces. While the bacon is cooking, grab a ball jar and combine the onion, vinegar, and olive oil. Screw on the lid and then give it a good old shake until it’s nicely blended. Chop up the avocado and crumble the blue cheese, unless of course you bought yours pre-crumbled. Grab a couple of handfuls of salad greens and pile them on the plate(s). Mix together the avocado, bacon, and some of the vinaigrette. Top your greens with the wondrous mixture. Spoon a bit more of the vinaigrette over the whole awesomeness that’s happening and dig in. I dare you not to say “Oh, My!”
